Directions

  • Step 1: Grab 2 eggs, crack them and pour them into a small bowl.

  • Step 2: Pour 1 TBSP milk into the bowl. Grab a fork and whisk the eggs and milk together until nice and frothy.

  • Step 3: Add a bit of salt and pepper, whisk to combine.

  • Step 4: Take a small skillet and heat it up over medium high heat. (Closer to high, than to medium). Place your hand over the top of the pan to test it for heat. You want a nice hot pan.

  • Step 5: When the pan is hot, add 2 TSP butter and allow it to melt. Pick the pan up and tilt it to the side so the butter can spread out evenly over the skillet.

  • Step 6: Pour the egg mixture into the pan. It should make a nice sizzling sound for you.

  • Step 7: Allow the egg mixture to coat the bottom of the pan and cook for about 1 minute.

  • Step 8: Take a spatula and slide the edge of the egg mixture into the center of the pan. Tilt the pan to the side and let the uncooked egg run from the center of the pan to the outside. Repeat this step twice more, on the opposite sides of the pan. Let the omelet cook for about 30 seconds more, until almost all of the egg is cooked through. You can still see there is a bit of runny egg on the top here. That's ok.

  • Step 9: Take your spatula, slide it under the omelet and flip it over, allowing the runny parts of the egg to cook through. See that nice golden brown sear in the middle of the cooked egg, that's what you want to see. Not a dark brown, but a pretty golden brown. That will give your omelet a lot of great flavor.

  • Step 10: Add some chopped ham and grated cheese to half of the omelet and fold it over. Let it cook for about 30 seconds and flip it over to the other side. Cook for 15-20 seconds more.
